In the small province of Kampot pepper has been cultivated for centuries, one of the best in the world. The white pepper is fully ripened and then soaked in water, causing the peel to dissolve. Careful drying in the sun completes the traditional manufacturing process. The mild, round sharpness of this pepper is suitable for fine sauces as well as fish and vegetable dishes.
