With our vintage sardines we have a particularly fine specialty for you: They are only fished at the end of the season, usually in September. Because then the sardines are "vraiment exceptionnel" and are the right size. The catches are freshly processed, hand-picked and not too closely soaked in first-class, cold-pressed olive oil.
They can then ripen in peace in their vintage cans specially designed by the artist Delphine Cossais and Coralie Joulin. Stored in a cool place, the oil can circulate particularly well and penetrate the fish from all sides. Especially if the cans are turned every 3-6 months. The longer they ripen, the more crumbly and tastier the sardines become.
The vintage sardines, much sought after by gourmets, have a minimum shelf life of 10 years, but can also be stored for much longer.
