The fragrance structure of Long Red Pepper differs very clearly from that of the Black Pepper. Its characteristic, sweetish, spicy-balsamic aromas, it has almost exclusively, as they are hardly or not present in other Pfeffersorten. Its aroma includes spicy, fruity, fresh and resinous notes. The piperine content is significantly higher than that of the black pepper, which makes it sharper and a permanent component of Ayurvedic healing. In India it is called "Pippali". He is said to have a positive effect on the organism especially in combination with curcuma. Long peppers are also known as "bar peppers" or "Bengali peppers". It was spread even earlier in Europe than the black pepper used today. The Romans loved long peppers, because of its spicy, sweetish and sharp taste, it suited perfectly to the typical stews and spicy sauces of ancient Roman cuisine. Partly red wines with long pepper were refined. Its oblong shape is preserved by the pepper, because the tiny pepper-berries, with their fruit stalks and the spindle, grow into a rod-like structure. Tip: Do not fill the long peppers into the peppermill. Instead, crush them in the mortar, crush them with a fine nutmeg, or leave them to the boil.
Because Langerroter Pfeffer is at the same time sharp, warm and slightly sweetish, it can be combined very differently. Wild game, also goose or duck meat can be tasted excellent with it. Also lamb, stews, strong cheese, smoked fish and strong wine sauce can be beautifully refined with it. In dishes with caramelised sugar, it acts as a taste miracle. An excellent figure makes in fruit tarts, on grilled fruits, fruit salad or in cocktails. As always, there are no limits to the imagination.
