DetailsEverything has actually been said about Germany's most popular grape variety, Riesling. Ever since German winemakers began to focus on the quality of their best wines. Some swear by the filigree Moselle Rieslings and others by a juicy Riesling from the Palatinate.
What we want to talk about here is a real treat from the Merkle winery in Württemberg, the land of tinkerers and inventors. Often enough the Merkles had to hear that Riesling is not well tolerated because of the high acidity. On the other hand, a fine acidity is something that supports the taste of the Riesling. So it had to be tinkered with. The acid as such could not and did not want to be approached, because it forms an important criterion in the taste profile. But what if the angular malic acid - as we always taste it in white wine - were converted into the milder lactic acid? Not really a hussar prank, because that's what happens with red wines anyway. After all, you want to make them appear round and full on the palate. The real breakthrough only came when they turned their attention more to the yeasts, which significantly influence fermentation. So you had to go in search of special yeast bacteria. No industrially prefabricated cultures that can bring any wine into any flavor. Instead, they discovered Sherlock Holmes' very special yeast cultures in their own vineyards, which were then collected and grown in their own laboratory.
The effect is impressive. The Riesling from the Merkle winery has lost none of its typicality. It is fresh and shows the full range of aromas of this grape variety. But it is by no means angular or even acidic.
The best thing, however, is that customers with histamine intolerance who have previously avoided any wine can get along much better with these very naturally prepared wines from Merkle. But please try it out in moderation first, even if it's pretty difficult right after the first glass.
