The quality of a coffee begins with the purchase of the green, as yet unroasted beans. Only personally selected goods according to our strict quality criteria are bought and roasted, which is why our roasting masters have high demands on the small beans: Coffee cherries should be harvested by hand; this is very time-consuming, but prevents unripe or already rotten cherries from impairing the quality. This is followed in most cases by wet processing, in which the pulp is dissolved from the coffee bean. After drying in the sun or in drying plants, the grapes are read again by hand. The high-quality coffee beans are packed and shipped protected.
