You have to be a little bit crazy to make a ghost out of a small shriveled citrus fruit from which only orange peel and English bitter jam can be made. But who does not dare, who does not win! As you know, the bitter orange is a cross between grapefruit and tangerine. And as is the case with parents and children, it has on one side the spicy-bitter taste and from the other the mandarin-like fragrance, which gives this spirit its special touch. The main constituent of the essential oil is limonene, but substances responsible for the characteristic odor are the small amount of aldehydes citral, nonanal, decanal and dodecanal and the esters linalyl acetate, geranyl acetate, citronellyl acetate, decylpelargonate and methyl anthranilate. The bitter orange came to Mallorca along with the other citrus fruits by the Arabs in the 10.-12. Century. Until the mid-18th century, the small bitter orange tree was used as a base for refining, which was then banned because of a viral disease. Trees that produce sweetness on some branches and other bitter oranges still grow today. In dried form, it has even made the bitter orange peel into the European Pharmacopoeia, where its quality is regulated for use in loss of appetite and indigestion. The effect is based essentially on the contained bitter substances, which stimulate the secretion of digestive enzymes.
