The hop is a creeper which the species name "lupulus" indicates, which is the diminutive of Latin "lupus" (= wolf), "because the plant growing on other plants does the same damage as the wolf does the other animals". Hops have been cultivated in Germany for more than 1,100 years. The fact that the dried female inflorescences are used as a traditional herbal remedy for restlessness and sleep disorders in the form of the drug "Lupuli flos", is less known than their use as a beer wort. Ingredients of the Hopfendolden are polyphenols and lupulin, a mixture of resin and essential oil. While the resin contains hop bitterers such as Humulone and Lupulone, the essential oil is estimated to contain more than 1,000 components, of which 440 are known to date. The most significant are the monoterpene myrcene, the sesquiterpenes α-humulene and β-caryophyllene and the terpene alcohol linalool, which are all quite volatile and poorly soluble in water. These substances evaporate for the most part in the classic brewing process of wort boiling and are found only in the Kalthopfung in significant quantities, for example in modern craft beers. In our minds of hops, however, all these substances are extracted well by the maceration in alcohol and, due to their volatility, reach the distillate, which promises the purest hop enjoyment without the bitter substances of the resin. Nevertheless, we have copied one of the brewers: a flavor hops was not enough for us - the mix makes it! And of course, it must be the hops from the world's largest contiguous hop growing region, the Hallertauer, where the author has plucked hops even at a young age.
